Still processing how unreal Saturday was. Our dream started realizing in a huge way and we were fully overwhelmed with gratitude.Thank you to everyone that showed up. The love was truly felt and we’re beyond encouraged by you all.

Huge thanks to a bunch of friends and fam who helped us big time from plumbing/flooring work (Jason), to fixing up the deck and bringing us chairs (dad), helping us prep (@madaross), watching Maya and giving us the best arepas in town (@aidalu05), helping on the line short notice (@carlodacook), coming out to help set up and staying longer to help us (@dapplesnyder), for roasting our coffee for the pop up (@eastlickcoffee), for welcoming us into their space (@fancyfreenursery), and for writing about us and helping spread the word (@kysilog @cltampabay). We couldn’t have done any of this without you all.

But major thanks go to @storyryter, Maya and @sassmary, for their unconditional support and patience for months as we worked almost daily on this.

Very humbled, proud, encouraged, and inspired to continue moving forward. And pumped to do it alongside @dirtycurty. I’m so glad that life led us to this point, after years of joking that one day we should start something together.

I also hate talking on the phone, don’t drink enough water but carry a huge water bottle with me everywhere, and I go to bed way too late even though I’m sleepy by 6pm every night.

One of my favorite quick, one pan dinners. 1. Sau

One of my favorite quick, one pan dinners.

1. Sauté onions with garlic and seasoning (salt, pepper and paprika) until onions are translucent
2. Add green peppers and season again (same condiments). Cook until they start reducing in size but still have some crunch to them.
3. Remove veggies and in same pan, season and pan fry milanesa steak (very thin steak so it’s a quick sear).
4. Slice milanesa steak and put everything together back in the pan to mix and cover.
5. Warm tortillas, and add a bit of sour cream (or Greek yogurt if you dislike life), then add with steak and veggie mixture and that’s it! Top with hot sauce.

Bonus: Any leftover you can heat up in a pan and then scramble eggs over them for a delicious and savory breakfast in the morning.

We do our best to prepare for when things go wrong, but we can’t prevent them fully. Thankfully we had back ups for all of it. Our set up is great and ideal when it works, but being a pop up means being flexible. I’m not sure the people we served notice all the chaos, but at the end of the day we sold out of the favorite drinks, didn’t lose any sales because of the things that did go wrong, we learned a ton from the experience, and we had a blast

(Because I cannot function without a hearty, savory breakfast, but I need it to be quick to make too)

-Whatever bread you have on hand, toasted.
-Two eggs pan fried with a bit of evoo, soft yolk. Salt.
-Half an avocado
-Trader Joe’s crunchy chili onion.

That’s it. Very messy to eat, a little kick, super filling: you got your protein, your carbs, healthy fat, and greens. Next time adding a layer of arugula before the egg.

Let’s be honest. Barrier to entry is high for the coffee industry, let alone the hospitality industry at large. Not many people have $50k+ to invest into a buildout, plus all the other million things you need to open a cafe or restaurant.

But you can get creative! Ask yourself… What’s the minimum viable product you can launch? For me, it was the cold brew program which then funded this cart.

And now, the brains behind this build out (@cabinetsolutionstb - they’ve been doing custom kitchen cabinets for longer than I’ve been alive) added mobile carts to their offerings: if you’re a bartender, a maker, a barista, or a chef, and are looking to take counter service mobile, hit my parents up. They have a couple of options to choose from. And as you see in the video, it’s fully collapsible, one person can put it together, it has wheels/breaks, and they’ll cut out holes to fit the equipment you may need.

Unpopular opinion: The bar is low for coffee shops

Unpopular opinion: The bar is low for coffee shops, perhaps partly because the barrier to entry is so high. But if you let consistency be the foundation and add attention to detail, care for everyone who supports you (employees and customers alike), have a solid grasp on your numbers, and infuse your own creativity/passion into it, the odds of success can increase.

If you want to start a coffee concept, or you already run one, and often feel discouraged, don’t give up. Do your due diligence. Care for people in practical and real ways. Continue pushing forward and figuring out how to constantly improve. Dive deep instead of wide. Get really good at one thing and then the next and the next and so on.

You don’t have to be the most talented, organized or popular. But you do have to show up day in and day out.

If you’re into coffee, you probably have heard about how special this kind of coffee is: it is grown in the high mountains of Nariño, Colombia at 2100 m (approx 6,561ft), and dried with the pulp, in the sun (honey process) allowing for a complex and sweet cup of coffee.

But did you know that…
-It is grown by an indigenous group (Ingas) who have transitioned from harvesting poppy (grown for heroin) to coffee. Because their past in the height of the drug conflict was rich in money, but very poor in every other aspect of life: 2-3 indigenous people were killed weekly.
-This past almost cost them their culture, but with the focus on growing coffee as a community it has helped regain their language, dress, and dignity.
-This area is remote, and it’s where the jungle of Putumayo turns into the Andean swamp land.
-This area used to be the northern most part of the Inca empire.
-This coffee doesn’t touch water during processing, because the Inga people consider themselves guardians of nature, and the care for water is one of their priorities.

Coffee is more than what we see in our cup. It has an arduous and long journey, full of people with beautiful stories, difficult stories, and a lot of love for their land.

I hope amidst the planning, the hustle, and the busyness this month has brought, you take a second to yourself to just be. To just breathe.

Because this year has been tough, but you’re still standing.

Because this world is bleeding, but we still see glimmers of hope and love in the midst of survivors.

Because you may feel the weight of privilege, but it’s also been mobilizing you to speak up, to demand change, and to love radically with your every day actions.

May this Christmas bring you hope, a renewed sense of gratitude, and love.
